Christmas Cupcakes

Here is the simple recipe to create beautiful Christmas Cupcakes and how to decorate them. We will use plain Cupcake recipe but you can make your own flavor of course. We will use some fondant to create sweet Christmas shapes like Santa and Snowman, You can either get cookie cutters for these shapes or totally make with hand. Hand made ones look more fancy and kids love them too as it will be a pleasant adventure for them.

CUPCAKE INGREDIENTS

  • 2 1/4 cups all      purpose flour
  • 1 1/3 cups sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup  shortening
  • 1 cup milk
  • 1 teaspoon vanilla
  • 2 large eggs

Preheat oven to 350 degrees. Place cupcake paper liners in cupcake pans.
Combine flour, sugar, baking powder, and salt in a large mixing bowl. Add shortening, milk, and vanilla. Beat for 1 minute on medium speed. Scrape the batter with a spatula.
Add eggs to the mixture. Beat for 1 minute on medium speed. Scrape bowl again. Beat on high speed for 1 minute 30 seconds until all well mixed.
Spoon cupcake batter into paper liners until 1/2 to 2/3 full.
Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean.
Cool 5 minutes in pans then remove and place on a flat surface to cool completely.

DECORATION INGREDIENTS

  • 1/2 lb Fondant  ( you can buy it from local bakery)
  • Icing Colours      (to dye fondant)
  • Round Cookie      Cutter for toppers
  • Christmas Shaped      Cookie Cutters
  • Edible Writing Pens ( to draw small elements like eyes, nose, buttons..etc)

Coloring your fondant
Use the cookie cutter to cut shapes from Colored fondant, or you can hand cut shapes however you wish. After cutting the base of shapes, you can make small elements by hand such as Santa’s hat, beard, big red nose, snowman accessories, reindeers horns..etc and add on top.
Use the edible pen to add the finer details like eyes and buttons..
Allow them to dry for a few hours. While they are resting , lets prepare the Frosting.

FROSTING INGREDIENTS :

  • 1 1/3 icing sugar.
  • 1 egg white.
  • 1/2 teaspoon of vanilla or other colouring or flavouring.

Place each of the ingredients into a mixing bowl.
Mix the items together until they form a stiff paste. You should do this by beating the mixture with a spoon.
Use your icing on your cupcakes immediately to ensure the best results. Then place all your Christmas Decorations made from Fondant on Top as toppers. Here are few examples to guide you.
